Delicious Barbecued

We have had 2 of the butterflied legs of lamb.They came vacuum packed and were ready the day after ordering. We live in Kaikoura so picked them up at the shop. They were really well packaged including a frozen ice pack. I marinated both of them before cooking with olive oil, lemon juice, fresh mint and rosemary and garlic (whizzed in the food processor and then rubbed all over the lamb after first rubbing in some salt and pepper). Left in fridge for 4 hours but could be overnight. Taken out of the fridge and allowed to reach room temp before cooking. I had frozen one of the lamb pieces for a couple weeks. We cooked them on the flat plate of the bbq for about 10 - 15 mins each side. Used a meat thermometer to check that inside was 60-65 C. Rested the cooked meat 10 minutes before slicing. DELICIOUS and mostly quite tender. Thanks for great meat and great service.
